Weekly Plan & Prep – My inspirations for the week πŸ˜‰

The plan is in and boy am I excited. This week I spent some time watching Tasty and Tastemade for some new inspiration and I found a gem for Sunday supper and it will also set us up well for work week meals!

Nyesha Arrington’s Short Rib Dumplings πŸ˜‹ are the inspiration for the week. In this video Nyesha completely enticed me with her grandmother’s Korean dumplings. She creates the dish while explaining her grandmother’s cooking and her own kitchen inspirations.

Since I’ll likely make 6 short ribs, I’ll have leftovers for quick work week meals. Drum roll for the plan, please…

1) Korean Short Rib Pappardelle – While the inspiration came from a rolled dumplings, I’m planning to use fresh pappardelle instead. I’ll need short ribs, mirin, parsley and fresh pappardelle. I’ll be share to share my take on Nyesha’s recipe tomorrow evening.

2) Short Rib Tacos with Kimchi Apple Slaw – I made these for the Superbowl with pork butt and they were a winner! I’ll need Kimchi, cabbage, green onions, green apple, lime, cilantro and tortillas. I’ll be sure to post this recipe too!

3) Korean Short Rib Noodle Soup – Since I’ll have Kimchi, green onions and cabbage, a noodle bowl sounds amazing. I have frozen chicken stock I’ll plan to use.

4) Mushroom & Bacon Risotto – Since I’ll have enough chicken stock for another meal, I’ll plan for risotto later in the week because I have bacon in my fridge and shallots in my pantry. I’ll only need lemon and mushrooms for this dish πŸ˜‰.

Spinach for my work week lunches and 1/2 & 1/2 for morning coffee πŸ˜‰
