Ingredients
1
lb
ground turkey,
or chicken
½
small red onion,
minced
⅓
cup
feta,
crumbled
½
tsp
dried oregano
2
TBSP
fresh mint,
chiffonade and chopped
½
cup
panko
2
cloves
garlic,
smashed and minced
1
lemon,
zest and juice
1
egg
salt & ground pepper,
for seasoning
Instructions
Prepare the ingredients.
In a medium mixing bowl, combine all the ingredients and mix together. Set aside in the refrigerator for 1-2hrs.
Preheat the oven to 375 and remove the meatballs from the refrigerator. Roll the meat mixture into twelve 1½ inch meatballs.
Add to a parchment paper lined baking sheet and back at 375 degrees for 30 minutes.
