Kimchi Fried Rice with Spam is AMAZING and a MUST TRY!!
I have never cooked with Spam and I will definitely buy this canned meat again because it was delicious! And yes, I know I will have haters out there, but you are missing out because it is salty goodness and you’d be surprised by the ingredients in Spam, i.e. pork, ham, salt, water, potato starch, sugar and sodium nitrate (which is used to preserve). Spam is also a beloved cooking ingredient in many cuisines; i.e. Hawaiian, Korean, Japanese and Filipino; so I suggest you give this canned meat a try 😉!
Back to the umami rice that will absolutely satisfy those taste buds and knock your socks 🧦 off!
In addition to the Spam, the funk of the kimchi, soy sauce, gochujang and the added crunch of fresh cabbage and carrot made this rice DELISH 😋! Also did I mention this rice comes together in 30 minutes or less, so it is a great meal during the work/school week! I hope you enjoy and cheers 🍻!

Some Notes
Spam Still Might Not Be For You 😉 – If you have leftover ham after your Easter meal, that would work well in substitution for the spam. This rice is also very similar to the Ham and Kimchi Fried Rice I made back in 2019 and just as comforting.
Preparing the Ingredients – Cut your veggies in similar sizes for fried rice. I chopped the red onion and green onions. For the cabbage and carrot, I used a julienne cut. Cut the spam in small cubes and run your knife through the kimchi a few times.
Preparing the Fried Rice Sauce – Mix all the ingredients together in a smallish bowl before adding to your rice.
How to Enjoy! – A fried egg makes this rice dreamy and I would definitely recommend it! In addition, fresh cilantro and green onions add great freshness!
Leftovers – Fry up that rice with an egg and make some delicious Breakfast Fried Rice! And please get that rice crispy on the edges for extra goodness!
Kimchi Fried Rice with Spam (Kimchi Bokkeum Bap)
Ingredients
- 1 TBSP coconut oil
- 6 oz spam, ½ the log
- ¼ red onion, chopped
- 2 green onions, chopped and separate the white from the greens
- 2 cloves garlic, chopped
- 1 TBSP unsalted butter
- 8 oz kimchi, chopped
- 1 cup cabbage
- 1 carrot, julienne
- 2 cups cooked rice, overnight rice is best
- 1 TBSP fish sauce, optional
Sauce
- 1 tsp sesame oil
- 2 TBSP soy sauce
- 1 TBSP hot pepper paste (i.e. gochujang)
For Garnishing and Finishing the Rice
- Fried Egg
- Cilantro
- Green Onion Tops
Instructions
- Prepare the ingredients, including mixing the sauce ingredients: sesame oil, soy sauce and gochujang.
- Begin by frying the spam in coconut oil on medium-high heat. Once it's browned, remove with a slotted spoon and set aside.
- Now add the red onion and green onion bottoms to the remaining coconut oil and saute until fragrant. Once fragrant, add the garlic and saute together with the onions.
- Add the butter and kimchi and saute together!
- Add the spam back to the fry pan and combine with the other ingredients.
- Add the fresh cabbage, carrot, rice and continue to fry together!
- Add the sauce to the fry pan and toss together the ingredients. Allow a light char to develop on the rice because that's deliciousness!
- Add the fish sauce in the final few minutes. Serve warm with a fried egg, cilantro and the green onion tops and enjoy, cheers 🥂!
