Crock Pot Corned Beef

St Patty’s ๐Ÿ€ Day is around the corner and why not try some tender and delicious Crock Pot Corned Beef.

I made this Corned Beef last year for St Patty’s Day ๐Ÿ€ and it was dynamite. What made it so delicious was the orange ๐ŸŠ, beer ๐Ÿบ, star anise, and slow cooking!!!

Towards the end of the cooking, I then added potatoes ๐Ÿฅ”, cabbage ๐Ÿฅฌ, and carrots ๐Ÿฅ• to the crock pot and boy was it a perfect celebratory ๐Ÿ€ meal.

Some Notes

Buying a Corned Beef with Pickling Spice – I went with Trader Joe’s Uncured Corned Beef Brisket and that pickling seasoning made the dish. Of course any Corned Beef Brisket could work, but aim to purchase one with pickling spice.

Low and Slow – This recipe calls for low and slow in the crock pot.ย  Of course, if you’re running short on time, you could opt for cooking on high, 3-4 hours.ย  This might make the corned beef a bit tougher and I can’t attest to that cooking method. Beer Braised – I used a Guinness and Light Beer because it’s St Patty’s ๐Ÿ€ Day after all.ย  If you prefer, you could opt for all Guinness, Light Beer or stock.

Adding the Root Veggies – Add midway through the cook time.ย  With the caveat, depending how cooked you want your cabbage, you may want to wait for the last hour or two to add.

Gravy Goodness – The beer braising liquid made some delicious gravy.ย  Simply strain the liquid and add a cornstarch slurry, voilร !

Got Leftovers – Oh boy, do I love Corned Beef leftovers because a Reuben Sandwich is an absolute favorite. Whether it’s a traditional Reuben Sandwich or a great spin on the Reuben, I’m all for it!!!

Grilled Reuben Sandwich – Slice the Corned Beef thin and layer those slices on brown bread or rye with Swiss Cheese, Thousand Island Dressing and Sauerkraut. Grill to perfection and enjoy ๐Ÿ˜‹!

Ingredients
  

Crock Pot Corned Beef

  • 1 corned beef brisket, find one with pickling spice Note: I went with Trader Joeโ€™s Uncured Corned Beef Brisket, which contains a pickling blend of mustard, coriander, bay leaf, red chili pepper, and dill seed, as well as a tangy vinegar powder and sweet brown sugar.ย 
  • 1 medium-size white onion, skins removed and cut in half
  • 2 carrots, peeled
  • 5 cloves garlic, smashed and skins removed
  • 1 bay leaf
  • 1 star anise
  • 1 orange, peel the orange and juice one half
  • 1 light beer
  • 1 stout

Root Veggies

  • small white potatoes
  • cabbage, quarters
  • carrots

Instructions
 

  • Add all ingredients to a crock pot and cook on low for 7-8 hours.
  • Midway through the cooking time, add the root veggies; i.e. baby potatoes, cabbage, and carrots to the crock pot.
  • Cook the root veggies and corned beef until tender and delicious.
  • Serve warm and enjoy with a St Patty's beer ๐Ÿบ, cheers ๐Ÿ€.
