Chili Lime Grilled Chicken
It’s Labor Day weekend and you know what that means, grill time with friends β€ This marinade, OH SO DELICIOUS and super easy to create. Yes, I know marinade chicken is nothing special, but this one is AMAZING π with it’s lime zest, soy sauce and chili garlic and it completely hits the 5 universal taste buds (i.e. sweet, salty, sour, bitter and umami).
I featured this marinade in my very first prep posts (I used lemon citrus instead of lime) and my Mexican Birthday Festivities and it’s usually the base of many of my Asian dishes, like my Asian Chicken & Ramen Bowl. Today I’m featuring it as a stand alone post because Jackie’s Eats & Treats got her first gig marinating chicken for a NFL fantasy draft party! Yes, this girl got a food prep gig, SCORE!!! Two, it’s a holiday weekend and I thought you might need some inspiration for the grill π

For a large crowd, here’s what you need for ingredients:
- ~6lbs of chicken thighs
- This feeds a crowd of 10-15 with some leftovers
- Zest from 4 limes
- Juice from 4 limes
- 6 cloves of garlic, chopped and smashed
- 2TBS of chili garlic sauce
- I prefer the Huy Fong Chili Garlic Sauce
- 3TBS of soy sauce
- 2TBS of olive oil
- Salt & pepper, for seasoning
It’s best if you allow this chicken to marinade at least two days π and then grill to perfection!
