Pineapple Vacation

After visiting Cinco De Mayo last night, I started missing the winter “spring-break” we’ve been known to take.  There’s nothing like escaping the cold in the tropics in the midst of cold weather ❄️ and while spring is in the air, it still feels too far away.

I decided on this afternoon cocktail because we have pineapple in our fridge and a pineapple rum drink is the perfect way to embrace the warmer weather around the corner.


The ingredients below are enough for two tropical cocktails 🍹

  • 2 cups pineapple chunks chilled
  • Couple ice cubes
  • 4oz coconut milk
  • 4oz white rum
  • 2 lime wedges


  1. Add pineapple, ice, coconut milk, and rum into a blender or to shaker that’s immersion blender safe and blend until smooth.
  2. Add more ice for a thicker frozen cocktail. If you want a sweeter drink, add in simple syrup! If you want a heavier rum drink, add more rum!
  3. Pour into a cocktail glass filled with ice and garnish with a pineapple round or lime wedge.
  4. Cheers and enjoy!
