Cinco de Mayo & Nana Inspired Weekly Plan & Prep
Cinco de Mayo is tomorrow and we love mexican food, so my chorizo will definitely make a debut in the form of a Mexican Street Taco tomorrow evening. We’ll be making some margarita too because after a weekend of mulching, why not! Here’s our Newman’s Own Limeade Margarita recipe.
Second plan – In the summer, we like eating fish because you can generally find fishmongers at Tendercrop Farm, Dover’s Farmer’s Market and Wentworth Greenhouses; we’re lucky, I know ๐. Some white fish (e.g. cod) will find its way into our kitchen mid-week and Nana’s Herbed Rice Pilaf will be the perfect side for a white fish.
I have some fresh rolls, sausages from Tendercrop Farm, frozen shrimp, greens and chicken thighs and my menu has been planned for the week!
Cinco de Mayo Festivities – Mexican Street Taco & Margaritas! For my Mexican Street Tacos, I’ll simply cook my chorizo until crispy and top with chopped white onion and cilantro. For the Margaritas, we keep it easy with Newman’s Virgin Limeade and it’s delicious!
Meal 1 – White fish, likely cod, and Herbed Rice Pilaf: here’s my grandmother’s recipe.
Meal 2 – New Orleans BBQ Shrimp: here’s that recipe!
Meal 3 – Italian Dressing marinated Chicken Thighs: I want to use the rest of the Italian Dressing I made for my Antipasto Tortellini Pasta Salad since we’re coming up on 2 weeks since I made it.
Meal 4 – Sausage and greens: We have some fresh rolls and a sausage, peppers and onions seem perfect!
