Weekly Plan & Prep

I’ve been ready with my plan for days now because I saw a Tasty video for Tacos Al Pastor and was immediately drawn to it and it inspired me to recreate the dish. The recipe calls for 4-5lbs of pork shoulder and I’ll have lots of leftovers, so pork dishes will be on the menu this week!

Meal 1 – Mexican-style Pork Tacos (Tacos Al Pastor). I’ll need a pork shoulder or butt, limes, achiote paste, pineapple, cilantro and tortillas. I’ll be sure to post this recipe and maybe even a video 👍 I’ll also plan to make Salsa Verde and I’ll need jalapeno peppers and tomatillos for that.

Meal 2 – Spicy Peanut Pork Noodles. I’ve been craven Asian spicy noodles. I’ll have leftover pork this coming week and I’ve got rice noodles, peanut butter and chili garlic sauce in my pantry. All I’ll need is bok choy, carrots, red pepper and ginger.

Meal 3 – Midweek Greens. We’ll need an easy green meal 🥗

Meal 4 – Pork Enchiladas. This is one of our favorites when we have leftover pork or chicken. I’ll also have lime, cilantro, avocado and tortillas for the enchiladas.  Looking for enchilada inspiration, check out my Salsa Verde Chicken Enchiladas, which is the same recipe for my Pork Enchiladas.

Meal 5 – Pork and Vegetable Stir Fry. I’ve got an assortment of veggies and a stir fry great way to use leftovers.
