Fall Comfort Food Favorites – You Know You LOVE β€οΈ Them!!!
Who’s with me that the fall is a great time to pull out the instant pot, crock-pot, stock pot or casserole and create deliciousness??? This post is inspired because I know we’re all heading into new routines as the leaves fall π and what’s better than a set-it and forget-it dish or tasty comfort food when you have time to prep on the weekend!!!
Instant Pot
I swear by this kitchen device and boy does it make cooking easy and tasty.Β I even have a section specific to this pot of magic, Jackie’s Eats & Treats Instant Pot Dishes.
Carnitas – Mexican crispy pulled pork, yes please!!!Β This is the perfect weekend treat and depending on your leftovers, you can create some incredible midweek dishes like my Salsa Verde Enchiladas or add the pork to chili, tacos or mac & cheese.
Red Curry Lentils – This vegetarian dish has been a favorite in our household since I first introduced it in March during COVID-19 quarantine.Β This dish is AMAZING on so many levels, red curry heat and coconut creaminess, so AMAZING β€οΈ!!!
Pulled Pork – Another version of Instant Pot Pulled Pork.Β This one is Korean inspired and is incredibly juicy and tasty!
Cheeseburger Helper – Guys, this is a MUST-TRY if you grow up on Cheeseburger Helper.Β This dish is sure to be crowd pleaser even for your picky eaters and is incredibly cheesy and satisfying!!!
Homemade Chicken Stock – This is the base in so many of my soups like Tom Kha Gai (Thai Coconut Chicken Soup) and Creamy Chicken Noodle (featured below) and the stock I use in my Bacon & Mushroom Risotto.

Crock Pot
The classic set-it and forget-it kitchen device, but I’ll be honest, my crock pot has taken the back seat to the Instant Pot!!!Β Β
Note: Many of my Instant Pot dishes and One Pot Wonders can be created in the Crock Pot. Good rule of thumb, most Crock Pot dishes take 3-4hrs on high and 6-7hrs on low.
Creamy Chicken Noodle Soup – Nothing better than creamy chicken noodle soup on a chilly day!Β This soup has brightness and will fill your house with scrumptious smells.

One Pot Wonders
One pot wonders are a favorite in our household.Β I love them because clean-up is made easy and of course we love the house filling with AMAZING aromas π and you know what happens then, incredible deep flavors develop!!!
Italian Gravy – Sunday gravy right here, low and slow simmer deliciousness! Grab your favorite bottle of red and get cookin!
Italian Beef Steak – GUYS, THIS ONE POT WONDER IS LIKE A DREAM COME TRUE, SO SCRUMPTIOUS β€οΈ!Β The secret to this sandwich is the braising liquid which makes for great sandwich gravy or dipper! My braising method is easy peasy with just 4 ingredients, check it out now!
Scottish Stovies – One of Dave’s favorites!!!Β Scottish Stovies are much like American Beef Stew and so comforting!
Jambalaya – This is the perfect one-pot wonder.Β Use andouille, along with pork or chicken and seafood, such as crawfish or shrimp sausage, for traditional Jambalaya or smoked sausage for an easy midweek dinner.
Chili – There’s nothing better than Chili on a cool fall day or during the football game!!! This can be on your stove top, as well as the crock pot, simply brown your ground beef (or if you prefer, pork, chicken or turkey) before adding to the crock pot and cook the remaining ingredients on high for 3-4hrs or low for 7-8hrs. If you’re aiming for the instant pot, 90mins on manual until comfort food is delivered!
Beef Stroganoff – Creamy yumminess right here!Β For my version, I include dijon mustard and white wine and boy is it tasty, check it out now!
American Chop Suey – This is another one of David’s favorites and a total crowd pleaser in most households.
Roasted Tomato Soup – My favorite when I still have tomatoes holding on from my garden or when I have lots of farm fresh or market fresh tomatoes.Β Simply roast your tomatoes, onions and garlic and blend for brightness!
Cullen Skink – New to my site and ABSOLUTELY AMAZING π!Β This soup is reminiscent of New England Clam Chowder, but more assertive and smokey because of the smoked haddock.Β If you love Clam Chowder, check out this soup because you’re sure to like this Scottish delight.
Hot & Sour Egg Drop Soup – Another new one to my site and can be created in about 20 minutes.Β That’s right 20 minutes and you can have Chinese soup at home!

Casserole Goodness
Casseroles are delectable food, FOR SURE!!!Β The cheesy or creamier the casserole, the better in my opinion!
Bacon Cheeseburger Casserole – One of my absolute favorites β€οΈ!Β This casserole includes all the fixings of a bacon cheeseburger cut into perfect yummy squares of happiness!Β This casserole also makes for the most AMAZING weekend brunch with a perfect poached egg, YUM!
Cheesy Bacon Scalloped Potatoes – Perfect for the holidays or a roast on the weekend!Β Check this recipe out if you love scalloped potatoes because it’s dreamy creamy goodness!

Chorizo Lasagna – A spin on the Italian classic and ABSOLUTELY DELISH π!Β The ricotta cheese makes this lasagna creamy, while the chorizo punches you with some heat; super tasty!
Hash Brown Casserole – A go-to for social gatherings, family get together or Sunday dinner!Β This casserole can be thrown together in about 10-15 minutes and baked when ready, which makes it easy peasy!
